Banana Oat Pancakes ::
1-3/4 c. whole wheat flour
1 c. uncooked quick cooking oats
1/4 c. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 c. milk
2 tbsp. olive oil
1 tsp. vanilla
1 banana, mashed
1 egg
Combine dry ingredients in bowl; set aside.
Whisk together the egg, milk, vegetable oil, and vanilla. Stir in the mashed banana.
Pour the egg mixture into the flour mixture and stir just until moistened.
Heat a greased griddle over medium-high heat.
Drop batter by large spoonfuls onto the griddle, and cook until bubbles form and the edges are dry.
Flip, and cook until browned on the other side.
Just a note, make sure your griddle is very-well greased because this batter is sticky!! But these pancakes are ooooh-so yummy!!
