Banana Oat Pancakes

I was once again blessed with a large amount of bananas from a coworker. Last time this happened, I made lots of my Chocolate Chip Banana Bread. However, this time it's right smack in the middle of the holidays, and we've got enough sugary baked goods going into our bodies. Soo I decided to go a little healthier and made a couple batches of these pancakes, some for now and most frozen for later.



Banana Oat Pancakes ::

1-3/4 c. whole wheat flour
1 c. uncooked quick cooking oats
1/4 c. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 c. milk
2 tbsp. olive oil
1 tsp. vanilla
1 banana, mashed
1 egg

Combine dry ingredients in bowl; set aside.

Whisk together the egg, milk, vegetable oil, and vanilla. Stir in the mashed banana.

Pour the egg mixture into the flour mixture and stir just until moistened.


Heat a greased griddle over medium-high heat.

Drop batter by large spoonfuls onto the griddle, and cook until bubbles form and the edges are dry.
Flip, and cook until browned on the other side.


Just a note, make sure your griddle is very-well greased because this batter is sticky!! But these pancakes are ooooh-so yummy!!
